what i'm asking is the 12G202 has had 0.060" skimmed and I just want to know if it will be ok to go back on the 1098 block. will the valves hit the pistons etc?

The valves will not hit the pistons.
Removing 0.060" of metal from a 'A' Series cylinder head gasket face is a common occurrence and which I have undertaken on many occasions without problems.
To satisfy yourself - place a piece of plasticine on top of the pistons - loosely assemble the head onto the block, turn the engine over at least three complete revolutions, remove the head and check the thickness of the plasticine.
You will find that there is adequate working clearance.
