I may well give that a go, it seems to work a dream. I was thinking one could do it in a large cardboard box with a perspex window and a rubber glove through the side to save on mess.
Presumably it would work for decoking also as I should imagine it would come under the 'grime' category which is just gunk on a surface unlike rust

Excellent! I imagine the soda will need to be very dry - maybe need to dry it on a tray in an oven first. And perhaps will flow better if put in a conical container (ie filler funnel) - with the pick-up hose in the tip of the funnel. This is how it's done in a beadblast cabinet. You could indeed contain the media by blasting inside a largish box with a viewing panel (or maybe a clear plastic storage box) - but the air would need to be vented out through a largish pipe (maybe 4" dia??) and filtered of course.
An alternative for carb cleaning is spray can of alloy wheel cleaner - and a tooth brush........

i've got an Aldi compressor(2.5HP, 25litre tank). Does anyone reckon this will work for a short burst?

Of course it will - provided the regulator will allow enough air to flow - it will be fine. The tank pressure may fall off after a few seconds blasting, but will recover quickly enough if stop for a few seconds.
