I'm restoring a 59 convertable at present and I am unsure what product is prefered by the concourse judges. I was considering bolted panel seal which comes in strips and remains soft allowing some flex in the panels. Trimmed back with a sharp blade it would look nice and its overpaintable but it remains soft.

The material you describe sounds like the correct type, it was, as per last year, still available from Brown Bros or a similair type of car based product out lets. Let us know if you have difficulty tracking it down
