The final drive ratio will be stamped on the crownwheel.

No - there is no ratio of 3.54:1. Do you have a picture of the numbers stamped on the crown wheel?

As well as 7041...there is a stamp plate with ata7034 wa..43 teeth on the crown wheel....a bit confusing

Well the only ratio with 43 teeth is the 5.375...... great for acceleration - useless for daily running.....

An Escort diff would not have MOWOG stamped/cast into it - FOMOCO yes.

Post a photo of the stampings on the crown wheel and you will be completely there.
A photo of the O/S of the diff housing would also help.
You should be able to determine from the chart above what the diff may have been fitted to originally from the diff stamping numbers i.e. 9-38 or 38-9 = 4.22 - 1, fitted to 1098cc Minor.
The diff ratio is also usually stamped at the top on the outer edge of the flange bolting the alloy diff carrier to the axle casing.
