The pressure plate in the picture above is not scrap it just needs to be set up correctly. It is a job you can do yourself without specialist tools.

I may have missed it but was there a reference/comment regarding to moving the No: 1 rocker shaft pillar to the No: 2 position and any issues that may occur? There is no machining needed with fitting the crankshaft rear lip seal but I would steer well clear of fitting a crank rear (lip) seal. The Dowty seal bag is a reusable and re-sealable bag designed by Dowty manufacturing.
The hair clip you refer to is I suspect is a split pin.
Split pins are not always supplied as part of a wheel bearing overhaul kit.

There should be one large bearing, one small bearing, one seal (ring) and one packet of grease per hub.
No harm will come to the bearings if to identify them you have to remove them from the factory wrapping.
Once identified re-wrap and re-seal in a Dowty seal bag.

It will be much easier to fit a coolant temp gauge than try and improvise what you want.
If you want the light to illuminate when the engine is overheated it will be too late. With a gauge you will know what the temp is and can observe it rising and stop the engine before the engine gets damaged.
