There is no fixed magnets in an alternator
True, but there is residual magnetism in the core of the rotor and that's all it needs.
Ever have a screwdriver or other tool that small parts would stick to? Not a fixed magnet but still having some magnetism.

Some dipsticks have 2 marks on them, min and max or low and full, some have only the full mark and the bottom of the stick is the low mark. As long as the oil is between the 2 marks it's OK. You don't need to keep it up to the top mark all the time. It's only when it gets down to the lower mark that...

the air filter housing, which can be seen where the battery should be, does not fit on the carburettor - the stud is too short to reach through the top of the housing.
The stud shouldn't stick through the top of the housing, there is a special, long, wing nut that goes on there.

The fan on our '61 (Canada) is yellow, engine is a 1275 (from what I don't know), but I suspect the fan is original to the car. There was 2 blades on the fan, I removed one.

Clean the rust offn the flywheel and pressure plate before you reassemble. Wire wheel works good for that.
Also, lightly clean the faces of the clutch disc.

I would replace all the tappets. If one or more are starting to fail, IMHO the others would be suspect too.

As I can see hone marks in the bores, do I leave the rings alone, it was pulling like a train and burning no oil so would rings be pointless ?. It sounds like you have already pulled the pistons, therefore you should replace the rings and give the cylinders a very light honing or hand emery scuffin...

Have you checked/verified that it is actually charging? Not just running on a newly charged battery.

Possible spark plugs. Have you checked, and/or cleaned, and /or gapped the plugs?

the existing copper tube now hits on the top of the manifold
Can you not fit a longer rubber hose between the lower rad hose and the copper tube, to raise it up?

The gearbox was empty of oil. I filled it up but the problem is still there.
Not a good sign, probably lots of internal wear now.

Starting with oil leakage an ending with a low-oil-pressure-fix seems a bit confusing.
I would suggest you reassemble with the cleaned up breathers, and then see how it drives and if it still leaks a lot of oil.
Then you'll know if the engine needs more work.
The oil pressure gauge is a good idea.

I measured the blanking plug on a spare radiator. To me it seems to be an odd-ball, .650" OD, 20TPI.

What tpm is your speedo ?
1525 Car has a 4.5 differential in it right now.

Checked the 3.9 unit and it has the 10 splines axle gears.
