The usual reason why an engine keeps on running when you turn off the ignition is because the mixture is too weak.
Try unscrewing the mixture adjusting nut at the bottom of the carb by one flat or two and seeing if it makes any difference.

Two possibilities. Firstly something has gone wrong wrong with the selector fork mechanism for first/second gear such as the locking screw falling out. Using a washer as a spacer sounds a bit dodgey to me. I make little spacers from pieces of sheet aluminium with the ends bent up to stop the adjusters sliding about too much.

So long as your engine is not getting so hot that your radiator is boiling over and you are continually having to top it up I would not worry about it.

The other possibility (as you have an early Minor) is that the carb has a brass float in it which has sprung a leak and sunk to the bottom of the float chamber in which case you need to get all the petrol out of it and solder up the hole.

Your back axle should have Hypoid 90 oil in it. From your description it is not clear what sort of oil you are using but running it with engine oil it it will not do it any good.

Consider replacing your oil filter if it has not been changed recently.
A blocked filter will result in the symptoms that you have described and replacing it is relatively easy.
