The different size seals are to fit the seal groove in the various filter heads. The oil filter element is fitted to & used by many vehicles not all with the same filter head.

Regarding the oil priming plug, it doesn't look like I have one of those...
...so I guess I will have to prime through the banjo bolt?

You are right in that you do not have a oil pump priming plug. Some 12A497 blocks do and some do not. So yes prime the oil pump via the banjo bolt. You should not need to wind the engine backwards - the oil pump will fill up of its own accord if left for a minute.
