Does anyone know the material used for the manufacture of the head studs on the 918 sidevalve engine

If it was carried over from the Morris 8 then it won't be anything special. Perhaps EN8 at best? If they are 10mm Mteric fine (Are they or is it just my memory) they may be available from another engine, if that is what you are thinking. Rolled threads would be nice but cut threads might be the only thing available.
If you find a source, I'd like to get some better ones for the Alta.

M10 x 1.5. Simple way is buy some M10 bolts 8.8 strength, cut to legnth and thread with a button die. Next up is 12.2 tensile, they would be more than enough. Put them in with "studloc" :D

I used cut down bolts when I rebuilt my MM and have done around 4000 miles now without issue, I was worried that they wouldnt be as strong as studs but it hasnt been a problem. The original had metric into the block and an imperial head!!

ESM do list them but at £7.95 each they seem rather expensive to me

The studs sold by ESM are EN24T. Both threads are M10x1.5 as already said. Threads are cut, not rolled.

Note, the threads are metric and the nut heads are 5/16 Whit, but you knew that already
