What should a side valve temperature running normal be? Mine seems to be all over the place!

Without a waterpump, it will be a bit random. At the head somewhere between 75 and 100?

Mine is water pump equipped and the temp sensor is on the heater take off point and when maintaining 50-53 mph I have a steady reading of about 173 farenheit (old gauge, near enough 80c)
Not sure what temperature thermostat is fitted. No water pump fan blades, electric fan in front of rad.
