You only need quantity one DIF107 gasket.
The gasket fits between the diff housing and the axle casing.

If the leak isn’t bad I would leave it as the replacement of the seal can go wrong:-

The pinion nut sets the bearing preload by the use of a single use crushable spacer.
A workaround if you are only changing the seal would be to mark the nut to the flange so it can be tightened to the exact same position, not forgetting to mark the flange to the pinion shaft to get it on the same splines.
The leak could also be due to pitting on the shaft where the lip of the seal runs, I think a shaft sleeve is available as a repair.
You will need to make something to stop the flange turning, easily done with some bar as an impact wrench can’t be used for tightening the nut.

You have to remove both half-shafts before you can remove the diff assy.
Uncouple the prop-shaft from the diff - align mark both diff and prop-shaft flanges before uncoupling them. Reassemble with the marks re-aligned.
Remove the ring of diff housing nuts/washers and remove the diff assy from the axle casing. You may have to disengage the brake pipe three way coupler from the diff casing nose.
Before you do anything make sure that you can remove the filler plug.
